Several months ago I visited a friend in Arizona. We stopped for breakfast on our way to the airport at the end of my trip and she ordered this amazing avocado toast with egg.
I don’t remember all the details of how that dish came together at the restaurant but have been eating something similar regularly at home ever since.
Before you begin, you have a decision to make — how would you like your eggs? Over medium? Sunny side up? Poached? Scrambled?
The possibilities are numerous, but I have to say, something about a runny yolk adds a little magic to this dish.
1 slice toast
1/2 avocado, smashed
lime (or lemon) juice
pepper & salt to taste
Prepare egg as per your preference (I’m digging on soft boiled eggs these days so that’s what is pictured here)
Top toast with smashed avocado, sprinkle with kosher salt and lime (or lemon) juice
When egg is done cooking, top avocado covered toast and season with additional salt and pepper as you desire
That’s it! Healthy, easy, delicious!
