Weekends, Basketball, Monday & Food

Wow! That weekend went waayyyy too quickly! Are you feeling the effects of a Monday come too soon also?

We were hit with a snap of cold weather this weekend, including freezing winds and snow. Even though J and I have got numerous indoor projects that could use our attention on these types of weekends, I didn’t get it together in time to get organized enough to tackle any of them. It was a weekend where a lot of couch time was logged instead, and I guess it’s fitting as there was a LOT of basketball to be watched!

Do you have a March Madness Bracket? I like to fill out a bracket, not for the high stakes gambling that may be involved, but because it keeps up my interest with the games – I know exactly who I am rooting for! How is your bracket looking? Mine is pretty poor; there have been some upsets that really threw me for a loop. FGCU, who?? Oh well, it’s all in good fun.

Speaking of being thrown for loops, how about I throw one at you and totally switch topics so I can share this dash of YUM:


Always looking for ways to keep my weekday breakfasts fresh and exciting, here’s my latest take on a grab and go breakfast: eggs scrambled with green peppers and onion, topped with 2 slices of bacon, and melted cheese all atop half of a toasted whole wheat English muffin. Mix up the scrambled eggs, and fry that bacon over the weekend and portion into individual serving containers – reheat in the microwave while the English muffin is toasting – and within minutes you have a delicious breakfast!

    I LOVE March Madness! My brackets have been shredded by the craziest upsets including our own New Mexico team. Once again we’ll wait for next year…….You’re right who is FGCU and I lived in Florida! Your dish looks soooo good as they always do. J’s a lucky guy!

      This year of March Madness has had so many shake-ups that it’s unreal!! Oh well, it’s all in good fun…or it is all in good fun for me anyway. Funny you mention what a lucky guy J is, I just asked him the other night how he felt about all these home cooked meals in the last 6 months and he said “it’s pretty awesome, although, I do miss my Little Ceasers Pizza a little bit”. Haha, he used to eat 1-2 of those pizzas a week before I moved here!
