Wow – last week completely got away from me! I was out of town the weekend before (wedding planning stuff – I’ll catch you up in a different post) and didn’t get any prep done for the week ahead – including meal planning and grocery shopping. It was a ‘fly the seat of your pants’ kind of week – and I hate those!
I intend to tackle this week in a much different fashion, with planning and preparation.
Here’s what’s on the menu for dinners this week:
-Spicy Garlic Chicken Pizza & Spinach Dip
-Chicken Breast, Baked Potato Slices, Veggie
-Skillet Lasagna & Salad
-Meatball Sandwiches & Salad
I’ll try to get some recipes out to you at another time for some of the above dinner options.
In other preparation for this week, I busted out this delish breakfast recipe over the weekend that re-heats well for a grab-and-go breakfast on work mornings:
What I used:
Frozen hash browns
Green chili sauce
Side Note: lots of things would be good in these burritos, so add what you like and feel free to play with it until you find the exact mix of ingredients that sends you to breakfast heaven! Also, I didn’t mention measurements because it really depends on how many you want to make & what your preference is for certain ingredients – this isn’t rocket science (or baking) so just use your best judgment.
Side Note #2: I really love to smother these babies in homemade green chili, but that wasn’t an option for this batch – so – I had to exercise that whole “go with what you’ve got” philosophy and maybe next time there will be more opportunity for green chili in my life!
What I did:
Brown sausage with chopped onion and minced garlic, part way through, add hash browns
Once that’s all done cooking, beat the eggs and add to the pan, scramble with the rest of the ingredients
Coat the bottom of the baking dish with green chili sauce (this keeps the burritos from sticking)
Fill tortillas with sausage/onion/garlic/hash brown/egg mix
Sprinkle on some cheese
Roll up and place in baking dish, seam down
Once all burritos are added to the dish, smother with more green chili sauce, and sprinkle on more cheese…and a little more…and a little more…and rationalize all the cheese with the argument that cheese is dairy, and dairy is a requirement of the food pyramid, so it’s all good (for more than one reason)
Bake in 375 degree oven until warmed through and cheese melts
THEN – if you are so inclined (as I am) turn off the oven and let the burritos sit in there while it cools. This gives the burritos a wonderful brown, cheesy crust!
They’re delicious in the moment, and just as good leftover. Once they cool all the way down I divvy them up into single serving dishes for that grab-and-go I love so much on work mornings!
