What to make for dinner???

All too often we are struck with the “what to make for dinner” dilemma.

This one takes a little time but is easy and wonderful:

Chicken:
-Heat oven to 425 degrees
-place chicken pieces into a baking dish
-season chicken (I used salt, pepper, garlic powder, & minced onion – but use what you have on hand and love)
-bake for about an hour, or until chicken is cooked through
Potatoes:
-peel potatoes and cut in half
-place cut sides down on a piece of foil large enough to fold around and make a pouch
-sprinkle with garlic salt, parsley, and pepper
-cut 1 tablespoon of butter into small pieces and place on top
-fold foil around, into a pouch
-toss in oven with chicken, 30’ish minutes will do, but longer is fine also
(the bottoms of the potatoes will get brown and crunchy the longer left in the oven and it’s soooo goooood!).
Green Beans:
-clean 1 lb fresh green beans
-place in steamer bag
-add 1 tablespoon butter
-sprinkle on seasoned salt
-pop in microwave for 4-5 minutes

It’s easy, yummy, and without a lot of after-dinner clean up.

    If I get stuck in the “What do I make for dinner?” zone, I simply open the freezer and pull out the first frozen concoction. I figure that if I bought it, it’s because I like it, so what comes out is what I eat. And I figure that if I’m in the “What do I make for dinner?” zone, it’s because I really don’t want to cook……….lol

      You are SO right, generally the “what to make for dinner?” debate comes from not wanting to cook to begin with…or not having stuff on hand that is easily thrown together. It’s good to keep some options in the freezer.
