The past few days have been very busy with projects & family time. So busy, in fact, that my usual activities have been put on the back burner….cleaning, laundry, cooking, blogging, showering…oh wait, not showering, I managed to work a few of those in around the projects.
We spent Monday and Tuesday painting the outside of my house. The project isn’t entirely complete as there’s still soffit & fascia (vinyl) to do but that’s a few weeks in the making. Pictures of the new paint job to come, so stay tuned.
Wednesday was spent with family in celebration of the 4th. I hope everyone had a wonderful & safe holiday & got to spend time with the fam.
Speaking of family time, how about a BBQ?
We can all agree that one of the best things about summertime is BBQ. BBQ’ing isn’t all about the meat though, perfect side dishes are a necessity to round out the experience.
One of my favorite sides for BBQ is macaroni salad, and my grandmother taught me how to do it up right.
Cook up some macaroni noodles. While those are boiling, chop up the veggies:
Once the noodles are done, drain and run under cold water to stop the cooking (mushy noodles are no good for cold pasta dishes — or ever, really). Add to the chilled noodles mayo and ranch dressing:
Toss the veggies in & mix it all together. Season with salt and pepper (to taste), chill for a bit and serve.

Here’s the recipe at a glance:
2 cups uncooked macaroni
1 cup mayo
1/2 cup ranch dressing
1 small cucumber
1/2 cup celery
1/4 cup green onion
1 large tomato
-while macaroni is cooking, chop veggies
-drain macaroni & run under cold water
-add mayo & ranch
-mix in veggies
-season with salt & pepper
**if the macaroni salad gets dry during chilling, add additional mayo & ranch. You can eyeball it, this is a hard one to mess up.
