One of my favorite things about summer is eating yummy foods off the grill. I’m not overly grill savvy, so I have to leave complicated things, like, steak, up to someone else, but I’m becoming braver and trying to push my limits on the grill from time to time.
Last year I discovered something amazing… Grilled Spaghetti!! The name is a tad misleading, since you don’t actually grill the spaghetti, but other things come off the grill to add a smoky grilled flavor to an easy, go-to, comfort food.
This time around I used spiral noodles, rather than spaghetti, but you’ll get the point.
Start by slicing up some of your favorite veggies & toss them in a bowl with some olive oil. I used green & red bell peppers, yellow onion, and mushrooms, but I would imagine other veggies would be terribly delicious in this dish as well. Add these to a grill pan and throw on the grill with some Italian sausage links. (I was cooking for 1 + a leftover meal so my portions are smaller than if you were cooking for multiple people).
Meanwhile, get some pasta going on the stove. Use whatever noodles you have on hand. Also out of the pantry, your favorite pasta sauce. For this particular dish I used a spicy red bell pepper pasta sauce and it was amazing! Get that warming in a sauce pan on the stove as well.
Turn those sausages and toss those veggies until they’re done, then remove from the grill. Slice up your sausage into bite size pieces.
When the noodles have finished cooking, drain in the sink and give them a quick rinse with cold water to stop the cooking process.
Then, for the grand finale, throw together your noodles, sauce, grilled veggies & sausage (I layer mine initially, but it all gets mixed together in the end, so ‘throw together’ is whatever you wanna do…toss together, layer, whatever).
Grilling adds a whole new dimension to an average bowl of of pasta (or plate of spaghetti).
